Nourishing Traditional Foods

Earthaven Ecovillage, Black Mt NC with Corinna Wood Choose one of the following Saturdays (10 am to 5 pm): April 3 October 2 Men and women welcome! Learn how to support optimum health with hearty foods and time-honored ways of preparing nuts, grains, vegetables, meats, and milk products for maximumizing nutrients and digestability. We will discuss the nutritional value of including a balance of plant & animal foods, raw & cooked, into our lives. We will also address the importance of seasonal eating and of eating plants and animals that were raised in a loving and respectful way. Hands-on techniques covered will include how to make your own: ?fermented vegetables, including saurkraut ?pre-soaked grains, nuts, and seeds ?yogurt & simple cheese ?nutrient-rich meat stocks Corinna is following in the footsteps of the renowned Price-Pottenger Nutrition Foundation. In confusing times of conflicting information on nutrition, they work hard to provide accurate scientific research based on modern and traditional cultures. An amazing number of health concerns can be addressed simply by returning to the ancient ways of eating of our ancestors! Corinna draws heavily on the work of Sally Fallon, who is a leader in the field of nutrition, challenging what she calls "Politically Correct Nutrition and the Diet Dictocrats" As Sally Fallon says in her book Nourishing Traditions: "The Diet Dictocrats don't want you to know that . . . ? Your body needs old-fashioned animal fats ? New-fangled polyunsaturated oils can be bad for you ? Modern whole grain products can cause health problems ? Traditional sauces promote digestion and assimilation ? Modern food processing denatures our foods but ? Ancient preservation methods actually increase nutrients in fruits, nuts, vegetables, meats, and milk products!" Cost: $55-75 sliding scale, you decide) includes a delicious, nutritious, organic lunch
